Information and Conditions of Participation

1. Spirit and Purpose
The Bundesfachverband Fleisch e.V. and the Deutsche Vieh- and Fleischhandelsbund e.V. are the patrons of the 1st European Deboning Championship:
The purposes of this event are:
> Promoting the occupational image of butchery jobs
> Improving technical skills
> Improving companionship and sociability
> Image of meat and meat products as healthful food
> Supporting the charitable association "Aktion Kinderträume e. V."
2. Rights of Participation
Eligible for participation are all butchery employees who are employed in the butchery industry in due form. Participation is only valid after registration (or via the internet application form) has been submitted in writing in due time as well after the protective charge amounting to € 50.00 has been paid. The protective charge will be reimbursed at the day of competition.
Max. 250 participants are permitted. The registrations of the participants are processed in the order of the payment of the protective charge. Closing date is 24 July, 2009.
3. Championship Works
The participants have to bone three shoulders of pork with calves (in the small and large final 5 shoulders of pork). The finished works will be assessed according to the following criteria:
- Speed (expenditure of time in seconds)
- Optical condition of the finished shoulder (cut and/or stabs in the flesh, amount of meat at the cartilage). Depending on the variations there will be time additions.
4. Categories
The participants are divided into two categories (min. 32 participants per category):
Categories:
> Butcher industry (female and male)
> Butcher craftsmanship (female and male)
False statements that are made during the assignation of the categories will cause disqualification.
Last years' results of the German Deboning Championship, where time, cleanliness and cuts in the meat have been assessed, were very close in both butchery craft and accord so that both categories may have the same chances to win the first prize as the "Best of the Best".
5. Championship Schedule
The championship will proceed as follows:
1. Preliminary to determine the 32 finalists
2. Round of last thirty-two
3. Round of last sixteen
4. Quarter-final
5. Semi-final
6. Small final for 3rd/4th place
7. Large final for 1st/2nd place
From the round of last thirty-two through to the end, there will be a hand-to-hand tournament.
The winner will reach the next round, i.e. the first competes against the last, the second against the second last etc.
6. Personal Equipment
Each participant is obliged to bring the following equipment:
- Footwear according to rules
- Own knives and own sharpening steel (only allowed with plastic handles). The knives must comply with the regulations of the German Fleischerei-Berufsgenossenschaft.
- Stab protection (glove and bolero).
Without imposing any charges the organiser will provide the following items which are mandatory to be worn:
- Work clothes
- Headgear and disposable apron.
Wearing jewellery and watches is not allowed during the competition due to hygienic reasons.
By his/her signature each participant approves in advance that he/she has participated in the training course of the Infection Protection Act.
7. Exclusion from the European Deboning Championship
The participant will be excluded from the competition with
- False statements during classification (see paragraph 4)
- Incomplete equipment (see paragraph 6)
- Tardy arrival
- Complaining about the jury’s decision.
8. Jury
All assessments will be made by an independent jury. Its decisions will be incontestable. Legal recourse is excluded.
9. Award Ceremony Prizes
At the end of the competition the results will be announced during an award ceremony. All participants will receive a certificate of participation and/or the winner’s certificate, and each participant receives a certificate as well as non-cash prizes.
Prizes Butchery Craftsmanship / Butchery Industry:
1st Prize for the Best of the Best (Overall Winner):
A Harley Davidson "Street Rod" amounting to € 17.900,00
Additional 1st Prize (Winner in another category):
A holiday trip amounting to € 5.000,00
2nd Prizes: Per category € 2.000,00 (cash)
3rd Prizes: Per category € 1.500,00 (cash)
Special prize: The fastest € 1.000,00 (cash)
10. Insurance
The participants start on their own risk. The organiser is excluded from any liability.
11. Accommodation of Participants
The participants will obtain a list which shows all nearby accommodation sites.
