The HK Team sponsored by F. Dick won the gold medal and was awarded as “Most Outstanding Visiting Team” at the recently concluded WA Oceanafest 2013 in Perth, Australia.
“To prepare for this competition, we had altogether 5 practice sessions, special thanks to Peninsula, VTC Pokfulam, IVE Chai Wan and Unilever for providing kitchen facilities and support; suppliers providing cost effective solution to us. And sponsors that provide us their generous contribution to make this trip possible.
This time we traveled with style, no more cartoon boxes, and no excess luggage (of course, we each carried an extra hand-carry).
The biggest win this time actually was not the medals. (Of course, we love the medals!) This trip we bought home three important treasures:
the true meaning of hospitality, sportsmanship and teamwork.
Crown Perth was our local host, their kitchen facilities were instrumental to our preparation for the competition; their helpful staff team was the core to our success. Special thanks to Chef Marco and Rachel, they are by far the best local support we have worked with in many different countries. Rachel, this beautiful warm-hearted purchasing lady has been doing magic on finding all our required ingredients and being there to ensure timely delivery, providing solution to our last minute requests. Chef Marco, not only did he help us with all the big and small equipment and utensils; arranging transportation; he was there every day to check on our needs; he drove us to the competition venue at 5 am in the morning, even when he was having his day-off. The Crown Perth team has demonstrated the true meaning of hospitality and has delivered professionalism with big smiles and big heart. Our team members have been moved by their sincere and selfless support, and are taking this home and become better individuals.
This time we experience the true meaning of teamwork, all dishes were joint effort from menu planning, work scheduling, dishes improvement, to final delivery. To be able to produce good product is one thing; to trust other team members to deliver your product is something else - for Pastry Chef to trust Savory Chef with one of the most critical task of the dessert; for Team Captain to provide undivided support to all dishes; for Calvin sharing his meat expertise; for Oka to give up his beloved mango to Ringo's dish...This is teamwork for real!
We shared the same kitchen with the German Team. We eased the usual tension of competing team by offering our combi-boxes, our equipments to them since they did not bring much from their far-away home country.
They were the first to congratulate our success and they offer to provide us with all the equipment we need for our Basel challenge. They have become our new best friends. The team learnt the true win does not base on technicality, but on sportsmanship.
Over the last week, the team is busy preparing or assist on preparing for HKICC at HOFEX, where we will probably meet most of you!”
