21. March 2017 - Stefan Glantschnig is "JUNGER WILDER" 2017!


The "JUNGE WILDE" 2017 has been confirmed: Stefan Glantschnig clinches a decisive win in the thrilling finale!

The 27 year old Carinthian prevailed against his two contenders, Michael Just, junior sous chef at the Palais Coburg in Vienna and Sebastian Leyer, sous chef at the Pauly Saal restaurant in Berlin. He won over the jury with the following menu:

Entree: Gurnard | Quince | Sesame | Ginger | Radish

Main course: Sashimi | Cardamom leaf | Genmaicha | beef sirloin | Chervil root | Fermented pepper | Egg scrambled in shell

Dessert: Mozarella | Beetroot | Chocolate

Stefan Marquard, the jury chairman and spiritual father of the YOUNG WILD CHEF competition awarded full marks for the first time in the 13 year history of the competition with 40 points and added a cherry on top: “We had three great contestants, but Stefan’s food was the best that I have eaten in 20 years. The main course especially was unparalleled. The ingenuity in simplicity, bringing three distinct components together on one plate, you just can’t do better than that.”

The award is not only judged by a panel of experts including Michelin-star chef Heinz Winkler, but the opinions of the consumers themselves also determine the most popular products from the world of cooking. The herb and parmesan cheese knife made by F. Dick scored top marks for its functionality, design and material qualities and was therefore honoured for its outstanding product performance.
