Il nuovo specialista per la lavorazione della carne disossae rimuove la pelle, i tendini coriacei e il grasso – è il nuovo coltello per disossare Red Spirit.

La forma stretta della lama deriva dall’industria della carne ed è stata concepita appositamente per lavorare la carne fresca. Consente di infilare il coltello tra osso e carne e di disossare la carne senza fatica. Con la sua lama corta di 15 cm, consente di lavorare in modo controllato ed efficace: più lunga è la lama, più è difficile e complesso eseguire tagli precisi.

I coltelli Red Spirit sono dotati di un filo senza compromessi. Le lame presentano un’affilatura estremamente sottile. Inoltre, il filo è lucido. La lama del coltello per disossare è inoltre flessibile, in modo da poter seguire perfettamente l’andamento delle ossa e da evitare di dover lavorare ulteriormente la carne.

13. giugno 2019 - Friedr. Dick beim TOP Talent 2019 - Das TOP Talent 2019 heißt Elise Scholl aus der Helm AG


Für die Teilnehmer/innen (Auszubildende Koch/Köchin) drehte sich alles in den letzten Wochen um den Kochwettbewerb TOP Talent 2019 - den Wettbewerb, der der Kochlegende Auguste Escoffier gewidmet ist und aus der Silbernen Escoffierschale hervorgegangen ist. Dabei setzte sich am 13. Juni 2019 Elise Scholl (Helm AG) in einem zeitintensiven und anspruchsvollen Kochwettbewerb mit drei Herausforderungen gegen ihre fünf Mitstreiter/innen durch.

Für die Teilnehmer/innen (Auszubildende Koch/Köchin) drehte sich alles in den letzten Wochen um den Kochwettbewerb TOP Talent 2019 - den Wettbewerb, der der Kochlegende Auguste Escoffier gewidmet ist und aus der Silbernen Escoffierschale hervorgegangen ist. Dabei setzte sich am 13. Juni 2019 Elise Scholl (Helm AG) in einem zeitintensiven und anspruchsvollen Kochwettbewerb mit drei Herausforderungen gegen ihre fünf Mitstreiter/innen durch. Sie überzeugte die Jury nicht nur in der Einzelkategorie „Produzieren“, sondern fuhr auch den Gesamtsieg ein.

Das Siegermenu war:
Vorspeise: Curry-Langostino-Wan Tan, Belugalinsensalat, Mousse von der geräucherten Buttermakrele
Hauptgang: Gebratenes Iberico-Kotlett unter Bärlauchkruste, Malzbiersauce, Glasiertes Spargel-Artischockengemüse, Kartoffel-Karottenpüre
Dessert: Passionsfrucht-Mascarponetörtchen, Muskatananas, Kokoseis

Friedr. Dick unterstützte den Wettbewerb und sponserte den drei Erstplatzierten einen Messerkoffer für eine erfolgreiche Zukunft.

Sharp knives will be an absolute prerequisite when the world's elite butchers meet in Sacramento, CA. in the USA next year. Friedr. Dick – one of the leading global manufacturers of chef's and butcher's knives – will provide sharp equipment for the 15 teams who have registered so far for the World Butcher's Championships.

Every nation will be presented by a team of six members faced with the following challenge: in just 3 hours and 15 minutes they will need to break down a side of pork and beef, a whole lamb and five chickens, transforming them into a creative display of finished cuts and value-added products. The panel of experts will not only judge their skills and techniques but also the originality of the products they produce and how they present them. In addition to providing the equipment for nearly all of the teams, Friedr. Dick also has the special honour of presenting the “F. DICK Knife Award” to the winning teams: the winner's trophy in the shape of a knife.

Friedr. Dick has strong roots in the butcher's trade and has been one of its most industry leading partners for decades. “We support butchers with a respectful approach to meat and food and advocate uncompromising quality and functionality with our products and brand”, states Steffen Uebele, Managing Director of Friedr. Dick. “That's why we are particularly looking forward to supporting the trade at the World Championships and providing the perfect equipment for the teams with our knives and tools.”

The World Championships have grown in stature since they were held for the first time in 2011. Rod Slater, Chairman of the World Butchers‘ Challenge, can hardly believe how the event has developed over the last few years: “When I first had the idea to arrange a competition between butchers from Australia and New Zealand in 2011, I would never have dreamed that one day butchers from all corners of the world would compete against each other”, states Rod Slater. “In Friedr. Dick we have found a partner who is just as committed to the butcher's trade and profession. I have known Friedr. Dick since my apprenticeship days and I am absolutely convinced of the quality of the products.”

Florian Wörgotter (Le Ciel, Vienna), Klaus Hölzl (Auszeit bei Klaus Hölzl, Gastern) and Nicolas Rathge (Gogärtchen, Kampen/Sylt) were able to impress all members of the judging panel and move on to the final round. Friedr. Dick is looking forward to the final Competition!

The high-profile “Top Chef” cooking competition is now setting new standards in Germany. Friedr. Dick, a traditional brand for professionals, is providing knives from its 1905 design series for the “Top Chef Germany” kitchens.

Since 8 May, 12 professional chefs have been competing for the “Top Chef Germany” award and prize money amounting to €50,000. They have to perform every step under the watchful eyes of the prestigious judging panel comprised of Eckart Witzigmann, award-winning chef of the century, two-star chef Peter Maria Schnurr and food critic Alexandra Kilian. Particularly high quality knives are therefore a recipe for success for top culinary achievements. Friedr.
